Chewy Keto Chocolate Chip Cookies

Whether you are on low carb diet or just want to bake in a healthier way, almond flour is a great option to use in baked goods, or as a breading for meats and vegetables. 

Almond Flour is simply skinless, blanched almonds ground to a super-fine texture. It creates a moist texture and rich, buttery flavor to cakes, cookies, pancakes, and muffins. Each serving contains less than half the amount of carbohydrates than regular plain flour. 

Here's a low carb, gluten-free almond flour recipe that are perfect for any beginners!

 

 

Step 1

Preheat oven to 180°C for 10 mins. Line a baking sheet and set aside.

Step 2

Melt butter in saucepan over medium heat.

Step 3

Place melted butter into glass bowl and add in dry ingredients until combined.

Step 4

Chill the dough in the fridge for 15-30 mins.

Step 5

Shape the dough into 12 portions on baking sheet and bake until golden brown for 10-12 min at 180°C.

Step 6

Allow to cool for 15 mins before serving.

Ingredients

HOT:

  • 100g Salted Butter

DRY:

  • 125g Xylitol

  • 5ml Vanilla Extract

  • 1 Egg

  • 170g Almond Flour

  • ½ tsp (2.5ml) Baking Soda

  • ½ tsp (2.5ml) Xanthan Gum

  • ¼ tsp Salt (pinch)

  • 90g Chocolate Chips
